My obsession with Asian cuisine continues.
I love Miso soup so much, there is something about it that is so warm & comforting as well as being ridiculously delicious!
My basic Miso soup is perfect for a light lunch on it’s own or a refreshing dinner with some noodles, fresh veggies & salmon. Add a bit of jazz to the mix and you’ve got yourself a dinner party show stopper.
INGREDIENTS
Serves 2
1 onion, diced
1 tbsp. coconut oil
3 garlic cloves, chopped
1-2 inches fresh ginger grated
½-1 chilli, chopped
1 tbsp. Miso paste
1 tsp Tamari
1 tsp Fish sauce (optional)
1 tsp Asian soup stock
500ml water
Handful fresh coriander
TOPPINGS
You can make this as extravagant or as simple as you like! The soup is delicious as it is, or if you’re feeling indulgent, make it into a noodle soup bowl and you can add whatever toppings you want.
I love using rice noodles as a base of my noodle soup bowls. When it comes to toppings, the list is endless; Fried tempeh, kimchi, bean sprouts, tofu, mushrooms, courgette ribbons, bok choy, salmon, beef. Make it your own.
METHOD
Add the coconut oil, onion, garlic, ginger and chilli into a pan and sauté until golden.
Once cooked, add the miso paste, water and stock to the pan along with the fish sauce and tamari. Leave to simmer for 5 minutes before adding the fresh coriander.
Serve in bowls, or cups.
